Can you say a little more on the Data Portability bullet under administration? What all does that encompass?

Sure, you are able to move team project collections or host them on multiple SQL Servers or SQL Server instances. It's to support multi-tenancy now that there are team project collections. TPC's are the portable unit and can even be attached/detached and moved from one TFS server instance to another.

As a TFS Admin/Consultant also, the presentation covered topics very well and would provided a good view into what TFS 2010 can offer organizations. Kudos!!
